Slow Cooked Pork Barbeque
2 lbs lean pork, cubed 1 cup chopped onion 2 cups mushrooms, quartered ½ cup of brown sugar, firmly packed 1 tsp salt 1 tsp mustard 2 tbsp chili powder ¼ cup vinegar 3 tsp Worcestershire sauce 1 (6oz) can tomato paste 8-10 crusty buns
Place cubed meat in slow cooker. Place onions and mushrooms on top. Combine all other ingredients. Pour over meat. Cover and cook on low for 9-11 hours, or until meat is tender. Stir with a fork and break up meat pieces up into shavings. Serve on buns with coleslaw topping. Oatmeal Molasses Cookies
½ cup honey ½ cup molasses ¾ cup shortening ¼ cup milk 2 tsp cinnamon 1 tsp cloves 1 tsp baking soda 2 cups whole wheat flour ½ cup raisins 2 cups oatmeal
Mix the ingredients together in the order given. Drop batter by spoon onto lightly greased cookie sheet. Bake at 350F for 10 min.
Taco Salad
1 lb ground beef or turkey Taco seasoning mix Head of lettuce 1 green and 1 red pepper 2 tomatoes Shredded cheddar cheese Plain corn chips Catalina dressing
Brown ground beef and drain. Add taco seasoning mix. Set aside to cool. Chop lettuce, peppers and tomatoes. Toss with the cooled meat. Add corn chips and shredded cheese. Mix together and toss with Catalina dressing and serve immediately.
